JP McMahon is a self-taught chef from Dublin who started cooking at 15 in an Italian restaurant and has lived in Galway since 1999[1][2]. He studied English and art history, and later earned a PhD in drama and theatre[1].

In 2008 he opened Cava, a Spanish tapas bar, and in 2011 Aniar, a restaurant that cooks only with Irish ingredients[1][2]. Aniar won a Michelin star in 2013 and still held it in 2026[4][5].

In 2015 he founded Food on the Edge, an international chef symposium in Galway[1][2]. His Irish Cookbook for Phaidon gathers more than 500 recipes, and An Irish Food Story followed in 2024[1][6]. At Aniar he also teaches cookery classes, reviving old methods such as curing, smoking and fermenting[3].
