What is HACCP and is it mandatory?

HACCP (Hazard Analysis and Critical Control Points) is the food-safety system every European food business must apply under Regulation (EC) 852/2004. Recording your checks — like fridge temperatures — is part of it.

Which temperature limits does the tool use?

The sheets use common EU guide values: chilled storage at max 7 °C (target 4 °C), freezers at −18 °C or colder, a core temperature of 75 °C when heating, hot holding at 60 °C or more, and cooling from 60 °C to 10 °C within 2 hours. Always check your national rules — they may be stricter.
