Which allergens are in the matrix?

The 14 allergens required by EU Regulation 1169/2011: gluten, crustaceans, eggs, fish, peanuts, soybeans, milk, tree nuts, celery, mustard, sesame, sulphites, lupin and molluscs.

Is an allergen chart mandatory?

Across the EU you must inform guests correctly about these 14 allergens, including for non-prepacked food. How you do it varies by country — written or verbal — but an up-to-date matrix is the safest basis everywhere.
