In practice the decision is almost always made on trend and taste — industrial chic, a chef's counter, 'it feels lively' — and almost never on what it actually costs or delivers. A designer shows you a mood board; nobody sets next to that board what the nearest table will actually hear, what the premium is to make a kitchen presentable, or what it means for your team to never have a private moment during service.
That's a shame, because the other side of the trade-off is genuinely well studied. Guests who watch their food being prepared rate the experience measurably higher in controlled field experiments — not because the food tastes different, but because visible labor is perceived as more valuable. That isn't a vague marketing claim; it's one of the better-documented findings in operations research from the last fifteen years, and this article states exactly what was measured.

The asymmetry between the two sides of this decision is exactly why it's so often made on gut feeling. The guest-side upside is diffuse and shows up later — in a higher rating, a review, a guest who comes back — while the three costs are immediate and daily: noise that reaches the room every single service, a brigade with no private moment every single shift, and a premium you pay on day one of the build. What feels later and diffuse always weighs lighter in a decision than what feels immediate and concrete — even when it matters more in the long run.
This also isn't one decision that plays out the same way for every kitchen. 'Guests watch the pizza go into the oven' at a lively pizzeria is a different trade-off from a pass sitting in full view of every table at a fine-dining room — the same architecture becomes a different decision depending on the distance to the nearest table, exactly how loud the line runs, and how experienced the brigade is. In the order they actually drive a design decision: first what the room physically has to absorb, then what it costs, then what it asks of your team, and finally why guests pay for it anyway.
1. What the nearest table actually hears
Start at the source. Independent measurements this blog already cited in its article on kitchen noise and hearing damage put a commercial extraction hood at full speed around 85 to 90 dB(A), a dishwasher or glasswasher around 80 to 85 dB(A), and a blender or ice crusher can peak at 88 to 94 dB(A). Even with nothing special running, the background hum of a full service often already sits around 80 dB(A). Those are the levels sitting behind a wall today — an open pass doesn't move them, it just lets them through.
How much of that reaches the nearest table depends on two things you choose yourself: the distance between the pass and that table, and whether anything sits between them. Sound roughly weakens with distance — every doubling of distance costs about 6 dB — and a physical barrier (a low counter, a glazed pass-through window, a closed wall) does the rest. 2. The premium to make a kitchen presentable
A kitchen nobody sees is finished for function: matte stainless steel, a floor that can take chemicals and heat, lighting that mainly has to be bright enough to cut by. A kitchen in full view of the room ends up, in practice, finished to the room's own standard — polished rather than matte surfaces, a floor that also has to look good rather than merely work, acoustic treatment above the pass, lighting that reads warm from the tables instead of factory-bright. That isn't an aesthetic whim; it's literally more, and different, material than a purely functional kitchen needs.

3. The minutes per service nobody on the brigade gets off-stage
A closed kitchen gives your team something that never shows up on a blueprint: informal recovery time. 4. The value premium guests place on watching their food appear
This is the side of the trade-off the three numbers above need to earn back, and it's better documented than most hospitality assumptions. Researchers Ryan Buell, Tami Kim and Chia-Jung Tsay published a field experiment in a real food-service operation in Management Science in 2017, systematically manipulating visibility between kitchen and guest: no visibility in either direction, only the guest sees the cook, only the cook sees the guest, and both directions open. The moment guests could see the preparation, they reported satisfaction commonly cited as roughly a tenth higher than when the kitchen stayed fully hidden — and the condition where cook and guest could see each other scored even higher, with faster service on top.
That lines up with earlier work by Buell and colleague Michael Norton from 2011, known as the 'labor illusion': visible effort raises the perceived value of a service, even when the actual outcome is identical. A guest who watches the cook work experiences the same dish as more valuable than a guest who only receives the plate — not because the dish tastes different, but because the labor that always went into it is suddenly visible. It's also exactly the mechanism behind a chef's table or tableside gueridon service: guests aren't paying for different food, they're paying for the labor that was always there becoming visible. Opening up a kitchen entirely on the strength of a mood board is the most expensive way to find out it doesn't work. This order starts with measuring, tests cheaply next, and only then decides for good.
First: measure your own situation
- Measure your current noise level during a real peak service with a free decibel-meter app, the same way this blog's own article on dining-room acoustics recommends.
- Measure the distance between your (future) pass and the nearest table, and run the calculator above with your own numbers.
- Look at your existing renovation budget — know what share of it goes to the kitchen today, before you consider a presentable finish.
Then: test the cheapest format first

- Add the 'no private moment' reality to the next pre-shift briefing, so nobody is caught off guard during service itself.
- Revisit the decision after one full season, with real numbers on satisfaction and turnover instead of the first impression from opening week.
An open kitchen is an architectural decision, not a mood choice
None of the four numbers above says an open kitchen is a good or a bad idea — together they say it's a decision that carries as much structural and operational weight as a floor plan or a menu, and shouldn't rest on a mood board alone. A restaurant 6 meters from the nearest table, with a quiet line and an experienced brigade, is making a fundamentally different call than one 2 meters away, with a loud line and mostly trainees.
The research behind the fourth number is genuinely solid: guests demonstrably rate visible labor higher, in more than one independent field experiment. But that same body of research also shows the value premium is largest when the visibility runs both ways — when the cook sees the guest just as much as the other way around — and that's exactly where the first three numbers earn their weight: the closer and louder that mutual visibility gets, the more heavily the cost lands on both the room and the brigade.
