In the order they build on each other: first the band in which nobody notices anything, then everything that pushes a service outside it.
1. The comfort band is narrower than you think
Thermal-comfort research — the ASHRAE 55 standard is the most widely cited reference — pins the range in which a seated guest in ordinary clothing notices nothing about the temperature: roughly 20 to 22°C. Inside those two degrees, temperature is not a subject. Outside it, it gradually becomes one as the gap grows.
Two degrees is narrow enough to miss by accident and wide enough to work as a rule of thumb. It is not a fixed point either: a room with more movement — staff walking tables in and out — reads a degree warmer than a room where guests sit still, and heavy winter clothing nudges the band down a fraction. For an ordinary service in ordinary clothing, 20 to 22°C is the working core.
The point of this article is not that your room must sit at exactly 21°C. It is that a band exists, you have probably never looked it up, and each of the next six numbers pushes you out of it at a different point in the service.
2. Your guests are their own heater
A seated, lightly active person gives off roughly 100 watts of sensible heat — about the same as an old incandescent bulb, all evening long. At twenty covers that is 2,000 watts that has to go somewhere. At fifty it is 5,000 watts, without anyone touching a single dial.
That is exactly why a room that feels perfect at 6pm at twenty percent occupancy can feel noticeably warmer by the 8.30 peak — not because anyone adjusted the thermostat, but because the guests themselves have become the heat source. Your climate system has to anticipate that curve rather than react to it: by the time it feels too warm, the room is already full and nobody can be asked to wait outside for a minute.

3. The table by the kitchen has a different evening
One room, two climates. A table next to the pass picks up radiant heat from stoves, ovens and the staff who pass it constantly — a few degrees warmer than the rest of the room, all service long, whatever the thermostat says. It is not a fault your climate system can dial out; it is a local heat source that never switches off.
The table by the door has the opposite problem, covered in the next point. What matters here: one average temperature for the whole room hides exactly the two spots guests complain about most — or more often, the two spots they quietly stop asking for.

4. A door that opens is a hole in your climate system
A busy winter service at a venue with a door straight onto the street can see that door open dozens of times an evening — every guest arriving, leaving, or stepping out for a cigarette. Each opening lets cold outside air in for a few minutes, and the nearest table feels it most sharply.
In summer the same principle runs in reverse: a door opening onto a hot street pushes warm air in exactly where your air conditioning is working hardest to remove it. Same physics, the sign just flips with the season.
A draught screen, a self-closing door, or simply moving a table a little further from the entrance costs no floor space — it costs moving one piece of furniture. The calculator below counts the door as one of the two zones where a table can sit structurally outside the band.
5. A degree too many costs more than one degree
A climate system correcting one degree during the busiest thirty minutes of the service — exactly when both the room and the kitchen are running flat out — works harder for that degree than the same one at a half-full room at 6pm. The energy comfort costs is not a flat amount per degree; it climbs at precisely the moment you can least afford it.
That is the practical reason to calibrate the thermostat ahead of time rather than correct it mid-service: a system already at the right starting point before the room fills barely needs to correct during the peak. One adjusted only at 8.30 corrects at the most expensive moment of the night.

6. Temperature pushes dwell time both ways
Temperature's effect on how long a guest stays is not one effect. A fraction warmer measurably speeds a fast-turn concept — people sit more actively, grow restless sooner, and the table clears faster. A fraction cooler does the opposite in destination dining: guests settle in, linger over a third coffee, and the evening stretches.
It is the same asymmetry the site's ambiance and music plan already established for tempo and volume: arrival, peak and wind-down each want their own setting, and that setting depends on what you actually want from that table — faster turnover or a longer stay. Temperature is the third sensory lever you can steer on purpose.
A venue built on turnover gains from a fraction above the midpoint of the band. One built on longer stays and higher spend per table gains from a fraction below it. Both are still inside the comfort band — it is not a choice between comfortable and uncomfortable, but between two comfortable ends of the same range.
7. The complaints you get are not the problem
A guest who is genuinely too warm rarely asks for the thermostat to be adjusted. She asks for the window open, fans herself with the menu, or — most often — simply books somewhere else next time without saying why. The number of complaints you receive about temperature bears no relation to the number of times it was actually the problem.

Two things worth knowing when reading this. If the whole room sits outside the band, that affects every cover at peak — that is a system problem, not a table problem, and the fix sits in your climate system or your seasonal setting. If only your worst table sits outside the band while the room itself is healthy, that only affects the covers in that zone — and the fix is a draught screen, moving a table, or a separate zone setting, not turning the whole room warmer or cooler.

What to do this week, this month and this season
Tackling seven numbers at once works for nobody. This order does, because each step makes the next one measurable.
This week — measure instead of feel
- Hang a cheap thermometer at your worst table — the one by the kitchen or the one by the door — and read it at opening, at peak, and at close.
- Compare those three readings against the comfort band of 20 to 22°C and note how many degrees, and at what point, you drift outside it.

This month — calibrate for the peak, not the opening
- Set the thermostat a fraction cooler before the service starts if you know your filling room is going to run warmer — correcting during the peak costs more than planning ahead of it.
- Add a draught screen or move a table if your door zone sits structurally outside the band.
- Consider a separate zone setting for the tables around the kitchen if your system allows it — that heat never goes away on its own.
- Decide whether your venue gains from a fraction warmer for faster turnover, or a fraction cooler for longer stays — and set accordingly.
This season — lock it in instead of re-feeling it
- Write down your calibration per season — winter, summer, shoulder — so you don't have to hunt for it by feel every year.
- Repeat the measurement at your worst table once a season; a door or kitchen zone shifts with the outdoor temperature.
- Put the comfort band next to your ambiance and music plan — tempo, volume and temperature belong to the same peak and the same wind-down, not to separate conversations.
