Every independent restaurant puts its team in some kind of uniform. Almost none of them have ever added up what it costs, or checked who is actually supposed to be paying for it.
Every restaurant that opens with a concept, a menu and a fit-out somehow also arrives at a decision about what the team wears — usually made in an afternoon, from a supplier catalogue, and never revisited again. It becomes background furniture: something staff put on before a shift and take off after, the same way they use the pass or the dish rack.
Nobody adds it up. A chef jacket here, an apron there, a pair of non-slip shoes when someone starts — each purchase feels too small to track, and each one looks like a one-off. It isn't. A uniform is bought, washed, stained, bleached and replaced on a schedule of its own, and that schedule runs whether or not anyone is watching it.
It also isn't only a cost. Long before a guest tastes anything, they read your team's appearance as a signal about the kitchen they can't see — the same instinct behind why a spotless open kitchen reassures and a stained one alarms.

Why nobody prices this — and everybody prices the fridge
The reason it never gets tracked as a line item is structural: uniforms are bought in small, staggered purchases — one new hire here, one worn-out jacket there — never as a single annual decision the way rent or insurance is. Nothing forces the twelve small purchases to be added up into the one number they actually are.
Compare that to the fridge or the till: both were priced once, at length, before opening day. A uniform is priced once per item, in isolation, for years — so the total nobody ever multiplied by team size and replacement cycle stays invisible on the P&L, filed under "supplies" or absorbed into nothing at all.
That's the same blind spot this site has already mapped for a restaurant's table linen — clean tablecloths and napkins have their own cost curve, laundered on their own contract. What your team wears is a separate line, with its own separate curve, and it deserves the same treatment.
The 7 numbers
Each number below comes from a traceable source: European hospitality-uniform supplier pricing, an EU occupational-health directive, EU-OSHA's own hazard ranking, or the site's own already-published numbers on kitchen accidents and staff turnover — never a hospitality rule of thumb with no source behind it.
1. €90–150 to kit out one kitchen hire, €40–70 for the floor
European hospitality-uniform suppliers price a basic chef jacket at roughly €25–50 including embroidery, an apron at €10–20, and a pair of certified non-slip kitchen shoes at €40–80 — a full kitchen kit-out lands around €90–150 per person before anyone touches a knife. Front-of-house is cheaper: a shirt or polo (€15–30) plus an apron (€10–20) covers most concepts, since trousers and plain black shoes are usually the employee's own.
That's the number every owner already has some feel for, because it's the one purchase that happens in a single, visible transaction — an order placed, an invoice paid. It's also, as the next six numbers show, the smallest part of what a uniform actually costs across a year.

2. 6–12 months — how long a kitchen jacket survives daily wear
Uniform suppliers and workwear guides converge on the same range: a chef jacket worn and laundered daily in a working kitchen needs replacing every six to twelve months, worn down by heat, bleach and the fact that it's the most-laundered garment on the payroll. An apron, catching the worst of every service, tends to die faster still — often within three to six months on a busy line. Front-of-house shirts, laundered less aggressively, tend to last twelve to eighteen months.
That turns the one-off number in #1 into a recurring one. A kitchen kit-out isn't bought once; on the low end of that range it's bought roughly twice a year, for as long as the role exists — which is exactly the annualised cost the calculator below prices, rather than the invoice price alone.
3. €1–2.50 a piece — what professional laundering actually costs, against a hygiene rule you already have to meet
Kitchen textiles — chef whites, aprons, tea towels — are conventionally washed at 60°C or higher, hot enough to control the bacterial load a day of service leaves behind; it's the same hygiene logic behind the HACCP principles this site already covers. Commercial laundry services charge roughly €1–2.50 per garment (or a flat monthly rate once volume justifies it), and guarantee that temperature is actually reached and held — something a domestic machine, run by whoever has five minutes, often can't.
In-house washing isn't free either: a 60°C cycle plus drying and folding costs the better part of an hour of somebody's time, an ageing machine's wear, and the water and energy for a load that runs hotter and longer than an ordinary wash. For a team laundering daily, six days a week, that hour adds up to a real weekly number most owners have never priced against the professional alternative.
4. Two different legal buckets — and only one of them is a real choice
The picture splits in two. Safety equipment — certified slip-resistant footwear, cut-resistant gloves — is generally the employer's to provide and maintain at no cost to the employee, under the same EU occupational-health framework (Directive 89/391/EEC) this site's own kitchen-injury numbers already cite: a business can't pass the cost of mandated protective equipment onto staff.
A purely branded shirt or a house apron colour is a different bucket entirely, governed far more loosely by national labour law and your own collective bargaining agreement — some require the employer to pay for and maintain any compulsory specific uniform, others allow a contractual wage deduction as long as it never drops pay below minimum wage. 5. The #2 cause on the EU's own list is the one non-slip shoes fix
EU-OSHA ranks the most common causes of accidents in this sector in a fixed order: manual handling first, then slipping, tripping or falling, then cuts from hand tools and being struck by falling objects. Slipping isn't a rare outlier — it's the second most common thing that hurts someone in a kitchen, and it's also the one hazard a €40–80 pair of certified shoes measurably reduces.
The site's own kitchen-injury numbers put a hidden multiplier on every incident — for every euro that shows up on an insurance claim, somewhere between eight and thirty-six more disappears as cover shifts, retraining and lost time. A pair of shoes that prevents one bad fall a year is, on that ratio alone, one of the cheapest insurance policies in the entire uniform budget.
6. 25–40% annual turnover means you're buying the same kit-out again and again
Hospitality turnover across Europe commonly runs 25–35% a year, and this site's own staff-retention numbers use a working example of 40% for a fifteen-person team — six people replaced, six new kit-outs, every year, on top of ordinary wear. A branded piece bought for someone who leaves inside their probation period is sunk cost the moment they hand back the keys; it can rarely be reissued as-is to the next hire.
That's the multiplier the number in #1 was always going to face: kit-out cost isn't paid once per role, it's paid once per PERSON who ever holds that role — and in a sector this fast-moving, that's rarely one person a year.
7. One impression, priced: what a worn-out uniform costs before a single dish arrives
Mary Jo Bitner's foundational "servicescape" research established that guests read the physical environment of a service business — including the people delivering it — as evidence of the underlying quality, before they can judge the thing they actually came for. A team in mismatched, stained or visibly worn uniforms is handing over exactly that kind of evidence, for free, at the door.
It's the same mechanism behind this site's own halo-effect numbers: one early impression colours everything a guest experiences afterwards, including a dish that would otherwise have spoken for itself. Which is the actual argument for treating uniform spend as a line worth planning rather than a nuisance worth minimising — it's part of what the guest is buying, not separate from it.

Notice which part of the total moves fastest when you raise turnover, not the kit-out cost. That's the number a hiring decision actually touches — and the reason #6 above is worth reading again before the next fast exit.
None of this argues for cheaper uniforms. It argues for pricing the ones you already have, the same way you already price the fridge, the till and the tables that came with the same opening budget.
It's a cost line like any other — once you can see it
None of these seven numbers is exotic. A kit-out has a price tag, a jacket has a lifespan, a laundry service sends an invoice, the law says what it says, EU-OSHA ranks its own hazards, your own turnover number is sitting in a spreadsheet already, and Bitner's research is decades old. What's missing on most nights isn't the data — it's the habit of adding it up.
Start with the number that surprises you most in the calculator above. If it's the laundering line, compare it properly against the in-house alternative rather than guessing.
