Fryer oil does not flip from good to bad. It slides through five recognisable stages, and each stage calls for a different decision. The problem is that most kitchens only know two actions — 'still fine' and 'bin it' — when three of the in-between signals are actually asking to be filtered, not replaced.

Colour alone is not a reliable signal — some oils darken faster than they genuinely degrade. Foam behaviour and smoke at normal temperature are the two signals that rarely lie.
Stages 1 and 2 are not a problem — that is where changing too early loses you money. Stage 3 is where filtering earns its keep: the oil is not spent, but it is degrading faster if you do nothing. Stage 4 is the stage most kitchens finally act on, which is one stage too late — the dish is already visibly different by then. Stage 5 is not a cost question but a safety one, and there is no debate to have there.

A fixed 'every three days' rule treats a quiet Tuesday the same as a packed Saturday, when the Saturday oil has done three times the work. Watch the foam as food comes out and watch for smoke at your normal frying temperature — those two signals follow actual use, a date on the calendar does not.

Stage 3 — turning, no strong smell yet — is exactly the moment filtering (a simple conical filter, a filter cloth, or a filtration machine) removes the crumbs and carbonised particles that make oil degrade faster on its own. Filtering buys days, sometimes weeks, and it is the step most kitchens skip because they assume filtering and changing cost the same.

Used fryer oil does not belong in the sink: it sets further down the pipe and is one of the most common causes of a blocked or overflowing grease trap — a problem that only announces itself at the worst possible moment. Pouring fat into the sewer system is also restricted or outright banned by wastewater bylaws in most EU municipalities.

Always ask for a waste transfer note at every collection. That paper is not just bookkeeping — it is the proof your fat was disposed of legally and traceably, should an inspection ever ask where it went.
